BEV’S ON THE RIVER – Sioux City, IA • 2007-2009
A fine dining restaurant, lounge and banquet facility located on the Missouri
Riverfront. The facility features a 120 seat main dining room, 110 seat lounge,
a 110 seat outdoor terrace, and a 350 seat grand ballroom. The restaurant and
conference center is attached to a Hilton Garden Inn Hotel with 123 rooms and
suites. The facility has been operating for three years with annual sales of
3.5M.
As the leader of this multi-faceted complex, I reversed a negative sales trend
by focusing on continuous operational improvement which continued to improve even
in the recent economic recession. I introduced and implemented several new
marketing tactics as part of an overall plan in increase market share. I lowered
overall employee turnover by 35% from 2007 to 2008. I successfully implemented a
new inventory and ordering system that improved accuracy and lowered costs.

A solely owned private corporation operating 2 Grisanti’s Italian Restaurants,
licensed franchisee operating 180 Papa John’s and 25 Qdoba Mexican Grill
Restaurants (generating $200M in annual sales)
In first full year, I successfully reversed 5 years of declining sales by
implementing and reinforcing existing operations standards involving guest focus,
food quality, safety, cleanliness and training. Established structured routines
for all managers to effectively control all cost areas, properly hire and
schedule for sales growth. First months sales after first full year were up 10%
from 2005.
